1. INTRODUCTION

Ischemic illness of heart and atherosclerosis occupy one of the first places on desease and death rates of the population of economically developed countries. Occurrence, development and to progress these diseases is closely connected with distribution of such risk factors, as ginerlipidemy, an arterial hypertensia, superfluous weight of a body, a diabetes or the broken tolerance to carbohydrates, etc.

Data of the clinical, experimental and epidemiological researches lead in various regions of the world, convincingly show close correlative connection between structure of a feed of the population and desease and death rate from ischemic illness of heart (IIH). For this reason the essential role in treatment and preventive maintenance IIH and its{her} basic risk factors belongs dietotherapy. Use of the factor of a feed allows to achieve the good and prolonged effect. The important role of dietotherapy does not raise the doubts in preventive maintenance and treatment of an atherosclerosis. Thus the most expressed influence on pathogenetic mechanisms of an atherosclerosis updating of a fatty component of a diet, and in particular decrease in the contents saturated and renders increase of nonsaturated fat acids. It is proved, that the most expressed influence renders updatings of a fatty component of a diet on a condition lipid exchange. As gipolipidemic agents sources polynonsaturated families w-6 and w-3 are used.

In this connection the great value is given to use in dietotherapy products with the lowered contents of animal fat. To the full it is possible to carry the oil of an amaranth containing squalene and promoting decrease in whey of blood of a level of cholesterol to such products. Last years the big attention is given studying of influence of oil of an amaranth on clinical efficiency of treatment of ischemic illness of heart and an atherosclerosis. Results of this work are reflected in the presented methodical recommendations.
